I’m going to sign up the a poker tournament at the MGM when I’m in Las Vegas, and I am wondering long it is going to take. I’m thinking that I’m going to do the 11am tournament.

Usually a few days but no more than 4 weeks though.

There are plenty of different tourneys, and the length depends on the structures. If that is a daily 11 am tournament, then ask someone in the poker room how long they usually take.
It could take 4 hours, it could take 7 hours… depends on how many chips you are starting with compared to the blinds, and how fast the blinds increase, along with how many entrants.
Just like all tournaments, depends on how many people enter and the Blinds structure, also if it is w/ Rebuys.
