How are the games organized on a regular night vs. when they have a tournament? I know the rules of the game, but not how they setup games when people just walk in wanting to play.

It really depends on the casino.
As a general rule the card room will have a reception desk. You go to it and they will tell you all the regular cash games that are running, such as $ 1/$ 2 no limit hold’em or $ 3/$ 6 limit Omaha etc. You can put your name down for a seat, or if one is available they will take you to your seat.
Most rooms will also run tournaments at various times of the day and week. Some busy rooms might have 4-6 per day. The buy in for the tournaments will vary depending on the room, time of day, and day of the week. Most rooms will have various events planned and many will have a calendar of upcoming tournament events.
If you get a copy of Card Player magazine it will list most of the regular tournaments at most of the major casinos.
If you tell them that you are new to live play (not your opponents, the staff at the desk!), they will be happy to explain how things work in their specific room.
